For the curious minds out there! Are you enjoying your favorite oysters while noticing they look a little whiter and taste a little creamier than usual? (See the yellow circles in the pic for reference). You might be excited to learn, or maybe a little weirded out, or maybe a bit of both, but you’re chomping down on what we affectionately call a “ripe” oyster and they’re 100% still awesome to eat! The oyster that the blue arrow is pointing to is not “ripe” yet. Let’s put it this way, a ripened oyster is ready to make babies, which means it’s healthy, happy and ready to create the next generation! For us, it’s a blessing and a curse. We find ourselves in a geographic location where our oysters spawn naturally. On the plus side, we can collect spat (oyster babies) and help nature rebuild and restore its natural oyster populations. However, a couple months from now you’ll probably see a very frustrated and angry post about how much spat we need to chip off our farmed oysters to keep them healthy and looking pretty.
